Paprika Salmon

4 salmon filet
2 T of olive oil

seasoning mix:
1 T paprika
2 t tony chachere's
1 t onion powder
1 t garlic powder
1 t red cayenne pepper (optional if you don't like it spicy)
1 t pepper
1/2 t dried thymes
1/2 t dried oregano


Rub the salmon filet with the olive oil then sprinkle with the season mix...
(mix up all your seasoning) and marinate your salmon filet ...refrigerator for at least 2 hours in refrigerator...

Taste delicious if you can grill them up...if you dont have a grill you can cook it in a grill pan inside with a little olive oil

1 mango cubed 
1 T chopped cilantro 
1 T diced red onion 
1 avocado --cubed 
1 jalapeño - diced 

1 t lemon or lime juice 
Salt n pepper

Catfish Poboy

Since we couldn't eat meat today .. I was searching for something easy that the hubby and I can eat... since the kids had taco and eggrolls.
I was getting off of a showing so I stopped by my local grocery store and they make the best fried catfish... So I decided to make a catfish Poboy... I bought a loaf of French bread and some tartar sauce..

I just dress mines with tartar sauce, sliced tomato, lettuce, ketchup, pickle and a little hot sauce

Crawfish Étouffée Pasta

1 pack of crawfish tail .. I like a lot of crawfish so I put in 2 bags
1 can of rotel (medium..if u want it spicy)
1 large can of cream of mushroom
1 small onion ..chopped
1 small bell pepper ..chopped
4 stalk of celery .. Chopped
4 cloves of garlic ... minced
1 stick of butter
Dash of tony Chachere and crack pepper

In a sauté pan.. 1 stick of butter then put in the celery, onion, garlic and bell pepper
Once it's translucent put in the can of rotel and cream of mushroom cook for about 5 minutes then put in your crawfish tail .. Cook for another 5 minutes then serve over pasta (can be serve over rice too)
Garnish with green onion
