this is how she likes it

Chloe has been having so much problem napping lately...she naps for like 10 minutes then wakes up..it doesn't help with Ethan making tons of noise either. But lately she has been napping better in her car seat/crib so I have been putting her in here for her nap. I guess I have to do whatever works for her.


Fried Rice (combination)


  • 4 teaspoons peanut oil, divided
  • 4 large eggs
  • 1/4 cup chopped scallions
  • 1/2 cup carrots, diced or pre-shredded--I buy the mix veggie from the freezer department (carrot/peas/corn) or even shredded cabbage
  • 3 cloves garlic, minced
  • 4 cups leftover white rice
  • 1 cup diced cooked pork--any sort of meat..sometimes I use shrimp/spam/chicken
  • Salt and ground black pepper
  • 2 T of oyster sauce
  • 1 t of soy sauce
  • 1 T of garlic power
  • green onion

Directions

Heat 2 teaspoons of the oil in a large skillet over medium heat. Add eggs and cook 2 to 3 minutes, stirring frequently, until cooked through and scrambled. Remove eggs from pan and set aside.

To the same skillet over medium heat, add remaining 2 teaspoons oil. Add scallions, carrots (veggies) and garlic and saute 2 minutes. Add rice and pork; cook 1 minute, stirring constantly. Add oyster sauce and soy sauce and stir to coat rice. Reduce heat to low, cover and simmer 5 minutes, until liquid is absorbed. Fluff with a fork and season, to taste, with salt and black pepper. Stir in cooked egg just before serving.

Grill cheese for the kids and chicken tenders

16 o Ribeye with loaded baked potatoe and baked sweet potatoe (brown sugar and butter)

Banh Uot

1 box of dry banh uot (can get at the asain store)
1 pound of ground pork
1 small onion
1 green onion
4 cloves of garlic
1 T of oyster sauce
1/2 t of sugar
pepper
1 cup of asain dried mushroom (need to soak in cold water)
1 cup of dried onion (sprinkle on top)
gio (asain meat)
lettuce
cucumber
basil
cialntro
serve with Nuoc Man (fish sauce)

boil a pot of H2O and once the water is boil--put in the whole box of banh uot. Once cooked drain in a colander....pour in a big pasta bowl

In a big saucepan put in some olive oil with the garlic and onion...cook until translucent the put in the ground meat ...cook for about 10 minutes (until cook) then put in the mushroom. Add the oyster sauce, sugar and pepper.
once everything is cooked pour over the cook banh uot ...next cut some green onion (shallots) and sprinkle on top with the dried onion...
also u can cut up some lettuce, cucumber, basil (julienne) , cilantro
serve with Nuoc Man
