Zuppa Toscane Soup
bacon, cut into a small dice...I love bacon so I used alot
1 pound hot Italian sausage...casings removed
1 large yellow onion, diced
4 cloves garlic, minced
5 cups chicken broth
5 cups Russet potatoes, cubed
kale--cut up into small pieces
4-5 C heavy cream or evaporated milk ( 4-5 Can )
In a large soup pot or sauce pan cook bacon over medium until crispy. Add sausage and break it apart as it cooks. Once sausage is browned and crumbled drain off the grease leaving a tablespoon or two to saute onion.
Take sausage out and leave to side
Next add onion and garlic saute until translucent.
add the chicken broth and potatoes and season to your liking..salt/pepper/Tony ..cook until potato is soft ...I usually cut my potato into little cube to make it fast and easy to eat ;)
Add kale and heavy cream
Bring to a simmer...be careful to watch the pot cuz u dont want to burn after u add the heavy cream..
I like it with alot of liquid so I added more heavy cream than the recipe called for
