Thit Kho

2 lbs of baby ribs (cut into little pieces)
1/4 C fish sauce
2 T of sugar
1 can coco roco( optional)
4 -6 boiled eggs
Green onion
1 T garlic powder
1/2 T Oyster sauce (optional)
1/2 C of water (if u like a lot of juice)

In a pot put in 1 T of EVOO and 1 T sugar
Caramelize it until it gets a golden brown color (making ur brown color)
Then throw in your meat (be careful for it will splash) then you stir and get the meat all coated with the caramelize sauce n pour in your fish sauce (turn on the vent)
Cook for about 1 minute then pour in the can of coco roco and add all your seasoning.. Cover the pot and turn down heat to medium low. Cook for about 30-45 minutes. Depending on how thick your ribs are.. I like mines tender ;)
My kids like a lot of juice so I add another 1/2 C of water.

About 5 minutes before you turn off the stove.. Add your peeled boiled eggs ( you can also add a can of quail eggs instead)

Garnish with green onion
*** add more seasoning to your liking.. If you want it sweeter add more sugar is you like it salty.. Add a little salt
Serve with rice and steam broccoli or sliced up cucumber
